What’s a good message to write in the memo line of the last child support check?

Assuming it’s truly the final payment and no debt remains outstanding, I’d suggest something simple, like “final child-support payment paid”. Nothing else.
Don’t write something snide or angry or in any way emotional. It reflects badly on the person writing the check; it suggests resentment of the child as much as of the other parent or the guardian. Remember that you aren’t the only person who’s going to read that memo line—lots of bank employees will read it and pass it around, with comments and exclamations about what kind of a horrible person writes something so nasty on a check.
Be an adult. You became one when you created a child.
